We try our best to share flavors from all over the world with our kids and luckily, they love it! Living in a border town, quesadillas are one of our favorite Mexican foods so Quesadilla Night is always a hit. These aren’t your typical plain cheese quesadillas, either. We love adding layers of flavor to our meals and these quesadillas are no exception! Quesadillas are traditionally made with a tortilla de maiz [corn tortilla] and a melty, stringy cheese like Oaxaca cheese. Our inspiration comes from the sincronizada, which is a quesadilla with ham and cheese. Our Feinberg Fam version adds a few more fillings and keeps it gluten-free, como siempre!

Some of our favorite always-gluten-free products come from Siete Foods. We’re using their tortillas and canned beans for the quesadillas and their tortilla chips for the salsa. For our veg, I’m making my go-to simple salad dressing to go on a crisp green salad. Plus, Asher shows the boys how to make one of our old-school favorites, Orange Julius!

It’s always important for us to have something fresh and crunchy at the dinner table. We’re so happy our kids love veggies and salads as much as we do. This salad was simple with mixed greens, avocado, cucumber and some pine nuts from nuts.com. We toasted them for a bit of a flavor boost. Everyone has their go-to DIY salad dressing, right? The one you use when you’ve got greens that need to be used today when you realize you just ran out of bottled dressing yesterday. This is my favorite way to make a quick dressing. It never fails to give us a perfectly dressed salad, any night of the week with no crazy ingredients or oils that you sometimes find in store-bought dressings.

Our quesadillas start with Siete Food’s Grain-Free Tortillas, which we add refried beans, cheese and other toppings to. Adding a few extra ingredients to the quesadillas really help to make the flavor just a bit more irresistible. For example, a few dashes of Cholula (or your favorite GF hot sauce) really do kick the flavor up a notch. If you really wanna take things to the next step, try a simple salsa. We made one with tomatillos, onion, jalapeños and some leftover pineapple.

For our sweet treat tonight, Asher showed Hunter how to make old-school Orange Julius drinks. They were just as frothy and icy as we remember them and Hunter and Charlie loved them too!
