Holiday Cookie Party!

‘Tis the season for sweets and holiday gatherings! We’ve put together some Santa-worthy cookies and we can’t wait for you to try them. To be honest, you might want to make double of all these cookies — one batch to keep and one to share!

We wanted to give the TikTok s’mores cookie trend a try but to make it our own, we gave them a hot cocoa twist. Introducing the GF Hot Cocoa S’mores cookie. It’s gooey, chocolatey and if you close your eyes, you’ll feel like you’re sipping cocoa by the fire.

They’re easy to assemble and if you love s’mores, you already know the drill! We used Partake GF Classic Grahams, stacked with a piece of chocolate, a marshmallow and covered with cookie dough.

These’ll spread a bit when they bake so give them some room on the baking sheet. TIP: if you want to have perfectly round cookies, get a heat proof bowl or cup that is about as round as your cookie and cover one cookie with it. Move it around in a circular motion until the cookie is nicely shaped circle. You might lose a bit of the cookie edge here and there but that’s a great treat for the chef! Once you’ve got your round cookies (or not), let them cool completely so that they don’t fall apart on you. Gluten-free baked goods generally have a more crumbly texture so allowing them to cool completely will help them retain their sturdiness.

Our second cookie was GF Brown Butter Chocolate Chip because how can you make cookies for the holidays and not make at least one batch of chocolate chip?? Our version using browned butter takes a few more minutes but literally infuses the cookies with a warm hug. It’s holiday science.

The final cookie is another classic that can be so simply turned into a holiday cookie. The Holiday Snickerdoodle using the King Arthur GF Sugar Cookie as the base and rolled in a mix of sugar and whatever warming spices you like. During Fall, it can be pumpkin spice snickerdoodles. During winter, maybe chai spice or keep it simple cinnamon with a dash of nutmeg, like we did here. It’s such a versatile cookie and perfect all year round.

We think Santa will love these cookies but we don’t blame you if you accidentally eat them all before he arrives! Merry Christmas and Happy Holidays from all of us the Feinberg Kitchen to you!
